t's beginning to look a lot like Christmas! As I sit here in my onesie Christmas pajamas, I am thinking about all the things that make me feel at home during the holidays. My mom makes her famous arroz con gandules and her pernil (slow cooked pork shoulder.) My sister always brings over her homemade coquito. What's coquito you ask?

I have an interesting relationship with avocados. I spent most of my life avoiding them, even though they are a huge part of Puerto Rican cooking. I don't know if I was a picky eater or didn't care for the way they looked but I wanted no part of them. That all changed one fateful day when I was prepping food in a restaurant I managed.
